Orange Cranberry Bread

Ingredients:

¼ cup (½ stick) butter, melted

2 cups Sugar

4 large eggs

Grated Rind of 2 Oranges

3 cups all-purpose flours

2 teaspoons baking powder

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon salt

1 cup fresh orange juice

2 cups fresh (cleaned) cranberries

1 cup chopped pecans

1 cup seedless golden raisins

Directions:

Preheat Oven to 350 degrees. In a large mixing bowl, cream the butter, sugar eggs, and orange rind with an electric mixer. In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Alternatively, add the dry ingredients and orange juice to the butter mixture and stir until well blended. Grease and flour 2 medium-size loaf pans. Pour the batter into the pans and bake until slightly crusty, 30 minutes. Turn loaves onto a wire rack. Cool. Yields 2 loaves.
