Apple Cheese Pie & Cheese Pastry

Cheese Pastry

Ingredients

2 cups all-purpose flour

½ teaspoon salt

½ cup shortening (Crisco)

½ cups grated cheese (American or Cheddar)

6-8 Tablespoons cold water

Instructions

Mix flour and salt.  Cut in butter, shortening, and cheese with a pastry cutter.  Add ¼ cups water; work into flour mixture - add more water if necessary.  Pat gently into a ball. Divide dough in half and shape into two rounds. Chill until ready to roll.  Roll each round to ⅛ inch thickness.

Apple Cheese Pie

Ingredients

1 recipe cheese pastry (See Above)

6-8 medium apples

½ to ¾ cups brown sugar

2 Tablespoons butter

1 teaspoon cinnamon

½ teaspoon salt

1 teaspoon lemon juice

Heavy dash of nutmeg


Instructions

Peel and core apples; slice into eighths or smaller, combine with sugar, cinnamon, salt, lemon juice, and nutmeg.  Divide cheese pastry into half. Roll out and line a 9 inch pie pan with 1 part of the pastry. Fill with apple sugar mixture and dot with butter and an extra Tablespoon of sugar.  Roll out remaining pastry and place over apples. Moisten edges slightly; press out the top and bottom crusts together. Trim ½ inch from the edge of the pie pan, turn under ends and flute edge.  Prick the crust with a fork in several places. Bake in a 350 degree oven for 40-45 minutes or until golden brown. Serve warm or cold with generous scoops of ice cream. Makes 4-6 servings.
