Aunty Lou's Potato Salad

Summertime is here!  Grilling, hot weather, lighter foods, awesome fresh taste, and it all starts sometime around Father’s Day. 

We chose some fun, out of the ordinary recipes to liven up a cook-out instead of the old standbys, a new twist on potato salad, macaroni salad, and beans. Have fun with them, and enjoy the desserts, too!

Ingredients:

1 ½ cups small new potatoes, peeled and diced

⅓ cup vegetable oil

⅓ cup red wine vinegar (maybe a little more if needed)

1 clove garlic, minced

1 teaspoon sugar

1 teaspoon dry mustard

½ teaspoon black pepper

⅛ teaspoon red pepper

⅛ teaspoon ghost pepper

½ teaspoon basil

1 (6 oz) package thawed frozen peas

1 cup chopped red pepper

⅓ cup chopped green onions

4 oz ham, cubed

Directions:

Cut potatoes into chunks and steam or cook in water, about 10-15 minutes or until just tender. In a large bowl, whisk together vegetable oil, red wine vinegar, garlic, sugar, dry mustard, black pepper, red pepper, and basil. Add warm potatoes, peas, red pepper, green onion, and the cubed ham. Toss gently to mix and serve warm.
