Florentine Tomatoes

Ingredients:

4 Tomatoes

1- 10 oz package frozen Spinach

1 tablespoon onion, chopped

1 tablespoon butter

Salt and pepper

Pinch of nutmeg

Parmesan cheese

Directions:

Cut tomatoes in half and place in a 325-degree oven in a buttered casserole for 10 minutes.  Heat spinach and onion only until ice is melted.  Drain, put in an electric blender.  Mix with the butter, salt, pepper, and nutmeg  Cook until hot.  Pile on top of the tomato halves.  Sprinkle generously with Parmesan cheese and put back in the oven for 10 minutes.
