Cake Mix Cookies

When I was in school, the couple weeks before Christmas break was filled with cookie baking and candy making. After slaving away for a couple of evenings, we would pack them in tins and gift them to all of our teachers and bus drivers as a thank you. 

My cookie recipe comes from the greatest version of cookbooks: church cookbooks. My recipe comes from the Little Sioux Luthern Church Cookbook, which Grandma Winter gave Momma in 1997. You can use any boxed cake mix you want with any fillings you want (or none). The ones pictured are Yellow cake mix with dates and walnuts and Devil’s Food cake with dark chocolate and yogurt chips.

Ingredients: 

1 Dry Cake Mix (any flavor)

½ Cup oil

2 tsp water

2 eggs

Directions: 

Mix all ingredients together. 

Beat well.

Drop by teaspoon on cookie sheet. 

Bake 8-10 minutes at 325 degrees. 

Transfer to newspaper spread on table to set.
