Anna's Peach Salsa

Instructions:

3-5 Peaches depending on size

4-6 Roma Tomatoes

Half a red onion diced

1 jalapeno diced 

1 Tablespoon Salt

1 Tablespoon Pepper

Directions:

Peel Peaches. To easily remove skin, take the ripe peaches and dip them in boiling water for 15-20 seconds. Use a slotted spoon to remove from the boiling water and dunk into an ice bath. If the peaches are not ripe leave in the water a little longer but you do NOT want the peaches to cook. Once peeled, dice the peaches and add to a medium bowl. Dice the Roma Tomatoes and add to the peaches. Add the diced red onion and add salt and pepper to taste.

For added sweetness, add a diced mango or strawberries.
