Grated Sweet Potato Pudding

Ingredients:

½ cup butter

1 ½ cup sugar

4 eggs, beaten

1 cup milk

½ cup light cream

4 cups grated raw sweet potatoes

1 teaspoon cinnamon

1 teaspoon salt

1 teaspoon vanilla

Directions:

Soften butter to room temperature.  Cream and add sugar slowly, beating all the while.  Add eggs, beat well.  Add remaining ingredients in order given.  Pour into a 2-quart casserole or 9x13 pan.  Bake at 325° for 1 ¼ to 1 ½ hours until set.
