Loaded Camp Potatoes


2-4 potatoes ( sliced or diced)

¼ stick of butter

Olive oil

Your favorite cheeses

Sour cream


Bacon Bits



1-2 purple onions



  1. Dice or slice your potatoes (whatever way is your favorite)

  2. Slice your onions

  3. Place your onions and potatoes in a bowl and coat with olive oil, add seasonings and cheese to taste

  4. Cut foil into squares to wrap around potatoes and onions to make a pouch ( we double wrapped ours)

  5. Coat foil with olive oil to keep the mixture from sticking

  6. Place mixture in the pouch and place a couple of slices of butter in the pouch

  7. Wrap your pouch and place onto coals

  8. Leave on the fire for 15-20 minutes

  9. Remove from the fire and let the pouches cool

  10. After cooling, we placed the mixture in a cast iron skillet and topped with cheese, bacon bits, sour cream, and chives
